Fried Mush

What’s your favorite thing to cook?

I made myself fried corn mush today. I boiled corn meal and poured it into a small loaf pan. When it was cooled and congealed, I cut slices that I fried in a pan until golden brown. With a little bit of maple syrup it’s a delicious breakfast treat. My limited knowledge tells me this is a popular food in the South. Even though I’m from the North, it was something my mother, grandmother and aunt liked to make. I have found childhood memories, especially of my mother making it for a special breakfast. For a long time, prepackaged mush was available in the grocery stores. I hadn’t seen it for years and learned how to make it from scratch. No one in my current family likes it. Which is good, because I have more for myself. Maybe if they had found childhood memories of fried mush on a Sunday morning, they would like it too.
