There’s a special place in my heart for my mother’s cooking. She’s been gone for eight years, but I still fondly remember her meals. She made a mean chicken soup and also a solid chili. Lucky for me my wife makes a good version of both too, even though her chili is vegan now. She makes chicken soup for my non-vegan son; I get a taste before she sends it over to his house. My mom could make simple things iconic too. One of my favorite meals was hot dogs, cold asparagus from a can and baked beans. It was best on Saturday nights in the summer. My childhood was often chaotic, but I could rely on my Mom’s dinners, except the nights she made tuna casserole: the thing of nightmares.
